So while I just don't have time to take pictures & pretend that I can blog, I do still use my blog as a place of reference. Even though I travel 2 or 3 days a week, I still enjoy cooking and try new recipes often. Pinterest is taking over the blogging days, the google reader days but its often slow for me and I don't have a good way to search on a particular recipe or ingredient.
So I will include links to my recipes here. Maybe I'll get back to blogging some day...

On a lazy Sunday I made a Roasted Chicken. I knew I was going to be gone for 3 dinners so I wanted some leftovers/easy meals for the house. http://www.skinnytaste.com/2010/02/roast-chicken-with-rosemary-and-lemon.html This was AWESOME and so easy. We had sauteed zucchini & squash along with cous cous. Gotta love a 3 yr old who LOVES couscous. He says "they pop in my mouth".

In addition to trying to eat healthier, I am trying to waste less & use more fresh ingredients. I have noticed that lately I've been that working mother who just doesn't have time & turns to prepackaged meals. And I while I could say "NO MORE, i know that isn't true. I will have to turn to prepackaged at some point, there just aren't enough hours in the day for my awesome cooking ;).So you will see I have some new websites I visit. I encourage everyone to take a look at them, I haven't been let down once with the new recipes.
