Cataloging New Recipes

I tried some new recipes lately and while I have them pinned, I tend to forget them or make notes about whether or not I liked them so... Crock Pot Chicken Cacciatore- http://www.skinnytaste.com/2012/06/crock-pot-chicken-cacciatore.html Good-i used boneless skinless chicken breasts. I would have enjoyed some mushrooms in it, but all in all, easy & delicious. Honey Garlic Pork Chops- http://recipes.sparkpeople.com/recipe-detail.asp?recipe=59689 Pretty good even though I didnt have honey so. Yeah I will be trying these again Orzo with Parmesan and Basil (made this with the pork chops)http://tastykitchen.com/recipes/main-courses/orzo-with-parmesan-and-basil-2/ Maybe I cooked the cheese for too long or had too much, it was very cheesy and thus made the noodles stick together. I'll try it again b/c I did enjoy the taste. Roasted Tomato Soup- http://smittenkitchen.com/blog/2011/09/roasted-tomato-soup-with-broiled-cheddar/ I have way too many tomatoes from the garden and I just dont have the time to can them. I needed something to make that was a little hands off but used many tomatoes. I wish I had doubled this recipe as it really made about 4 servings. Also I would have omitted the red pepper. It was very very spicy and I would prefer basil to the spiciness.

Snickers Cake

1 german chocolate box cake mix (and the ingredients on the box, so oil, water & eggs)
1/3 cup milk
1 stick of butter
1 bag caramels
6 oz chocolate chips

mix box cake as directed. Pour 1/2 of the cake mix into a greased 9x13 pan. bake at 350F for 15 mins. Melt caramels, butter, milk. Pour over the cake. Sprinkle with chocolate chips. Pour remaining cake mix over the cake. Bake at 350F for 20-25 mins.

Calico Beans

Calico Beans

1 can butter beans, undrained
1 can kidney beans, undrained
1 can baked beans
1lb ground beef
8 oz cut up bacon
1/2 cup of brown sugar
1 Tbsp dry mustard
2 tsp white vinegar
1/2 cup ketchup
cayenne pepper
black pepper
liquid smoke
1/2 cup of onion

1. Brown bacon, beef & onion together
2. Mix everything in a crockpot
3. Done

If you cant tell I am in the cleaning out house mode. I was on the search for my favorite banana bread recipe and couldnt take the clutter anymore. So I am typing up some recipes here as my "virtual recipe box". Some I have made, some I have not, but I am sick of the paper. I'd just pin them or bookmark them, but quite a few I dont have a link for or they are so old the websites dont have them anymore. so the next few posts will be a plethera of recipes.

Nothing to see here...

So while I just don't have time to take pictures & pretend that I can blog, I do still use my blog as a place of reference. Even though I travel 2 or 3 days a week, I still enjoy cooking and try new recipes often. Pinterest is taking over the blogging days, the google reader days but its often slow for me and I don't have a good way to search on a particular recipe or ingredient.

On a lazy Sunday I made a Roasted Chicken. I knew I was going to be gone for 3 dinners so I wanted some leftovers/easy meals for the house. http://www.skinnytaste.com/2010/02/roast-chicken-with-rosemary-and-lemon.html This was AWESOME and so easy. We had sauteed zucchini & squash along with cous cous. Gotta love a 3 yr old who LOVES couscous. He says "they pop in my mouth".

In addition to trying to eat healthier, I am trying to waste less & use more fresh ingredients. I have noticed that lately I've been that working mother who just doesn't have time & turns to prepackaged meals. And I while I could say "NO MORE, i know that isn't true. I will have to turn to prepackaged at some point, there just aren't enough hours in the day for my awesome cooking ;).So you will see I have some new websites I visit.
